Geological characteristic
Mix of chalky, marl and sediments from the Loire River.
Grape variety
100% SAUVIGNON BLANC. The SAUVIGNON is locally called Blanc Fumé.
Colour and alcohol content
Deep and strong yellow colour. Alcohol : 12,5%.
Vinification process
Hand-picked harvest. Research of the optimal maturity of the grape. Slow and progressive vinification at low
temperature. Stored mostly in inox vats or enamelled steel for a minimum of 6 months period.

Tasting notes
The Pouilly-Fumé is mostly defined by the intensity and complexity of its floral and fruity aromas. We get a very expressive smell with a touch of violet and the first taste in mouth reveals exceptional amplitude. Long after-taste, good balance and roundness. Serving temperature at around 11°C.
